Coyo Taco’s latest restaurant build-out in Coral Gables balances high-volume hospitality performance with a clean, architectural identity, inside and out. The project centers on three signature elements that shape the guest experience from first approach to final seat. Those elements are custom banquette seating, textured wood wall paneling, and an exterior aluminum canopy system. CM Custom Design handled the design, fabrication, and installation of each element in-house. As a result, the build-out reads as one cohesive hospitality environment built to perform under daily guest volume.
Inside, we built the custom banquette seating for this Coyo Taco Coral Gables build-out to maximize seating capacity without compromising circulation. This keeps the dining room efficient, even at high volume. Built-in bases and clean end-panel terminations keep each seating run visually continuous. Meanwhile, a high-back profile creates comfort and a sense of privacy at every table.

Behind the banquette seating, horizontal wood wall paneling introduces warmth and depth to the dining room. This gives the interior a layered backdrop that feels intentional rather than decorative. Outside, a series of custom aluminum canopies with mesh, perforated infill panels defines the storefront experience.
The canopy system provides shade and visual rhythm along the Coral Gables facade while maintaining airflow and natural light for guests seated outdoors. We engineered the fabricated exterior support feet and structural components for stability and precise alignment. In addition, every finish holds up to daily outdoor use and South Florida weather.
